My Mama’s Breakfast Sandwich

Ingredients

  • 1 loaf Cuban bread or a soft French baguette

  • 4 large eggs

  • 4 slices sweet ham

  • 4 slices cheddar cheese

  • 2 tablespoons butter, softened

  • 1 tablespoon milk

  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut the loaf in half lengthwise and spread butter over the cut sides.

  3. Place the bread cut-side up on a baking sheet. Bake for 10–15 minutes, or until golden and toasty.

  4. Whisk the eggs with the milk, salt, and black pepper.

  5. Melt a little butter in a skillet over medium-low heat. Add the eggs and gently scramble until just set.

  6. Remove the toasted bread from the oven. Layer the ham, scrambled eggs, and cheddar cheese on the bottom half.

  7. Return the open sandwich to the oven for 2–3 minutes, just until the cheese melts.

  8. Add the top half of the bread, press gently, and cut the sandwich into portions.

  9. Serve hot with café con leche
