Carne con Papas (Beef Stew)
Ingredients
1½ lbs beef stew meat, cut into bite-size cubes
2 medium potatoes, peeled and cut into chunks
2 onions, chopped
2 red bell peppers, chopped
1 teaspoon minced garlic
6 oz tomato sauce
1 cup dry red wine
¼ teaspoon dried oregano
¼ teaspoon cumin
1 teaspoon salt
Water, as needed
Instructions
Place the beef in a large pot and cover with water. Bring to a boil and cook for about 15 minutes, then drain.
Return the beef to the pot and add enough fresh water to just cover it.
Add the onions, bell peppers, garlic, tomato sauce, red wine, oregano, cumin, and salt. Stir everything together.
Cover and simmer over medium-low heat for about 30 minutes, stirring occasionally.
Add the potatoes and continue cooking for another 20–25 minutes, or until the beef is tender and the potatoes are soft.
If the sauce is too thin, uncover the pot during the last few minutes and allow it to simmer until slightly thickened.
Serve hot with Cuban white rice and, if you like, sweet plantains.
