Cuban Ropa Vieja (Shredded Beef)

Ingredients

  • 1½ lbs flank steak, sliced

  • 2 tablespoons olive oil

  • 1 medium onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 ripe tomato, chopped

  • 1 bay leaf

  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder

  • 1 tablespoon dried oregano

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the sliced onion, green bell pepper, and red bell pepper. Sauté until softened.

  3. Add the flank steak, chopped tomato, bay leaf, cumin, garlic powder, and oregano.

  4. Stir everything together and cook for about 25 minutes, allowing the beef to become tender and absorb the flavors of the peppers, onions, and seasonings.

  5. Remove the bay leaf before serving.

Serve with white rice, Cuban black beans, and sweet fried plantains
